A singular pronoun refers to one person or thing.

Phil sure likes his pancakes.

       (The singular pronoun "his" refers to the singular noun "Phil.")

A plural pronoun refers to more than one person or thing.

Phil loves pancakes so much that they are always on his mind.

       (The plural pronoun "they" refers to the plural noun "pancakes.")
